Next Best Thing to Robert Redford
This a recipe for a dessert that was introduced to me as The Next Best Thing to Robert Redford. I've also made it will all lowfat ingredients (a low-fat graham cracker crumb crust, low-fat pudding mix and low-fat coolwhip. I wouldn't recommend the low-fat cream cheese...the texture is kind of weird). - Source: rec.food.baking/Nancy (The Otter)
Bottom Layer 1 cup flour 1 cup finely chopped pecans 1/2 cup butter, softened
Middle Layer 8 oz. cream cheese, softened 1 cup sugar 9 oz. cool whip, divided
Top Layer 1 large (6.75 oz) package instant vanilla pudding 1 large (6.75 oz) package instant chocolate pudding 3 cups cold milk
Make bottom layer by mixing ingredients until crumbly. Press into 9x13-inch pan. Bake at 350F 15-20 minutes and lightly golden. Cool.
Make middle layer by beating cheese and sugar until smooth. Fold in half of the cool whip and spread over cooled crust.
Make top layer by beating milk into pudding mixes until smooth and thickened. Spread over middle layer. Spread remaining whipped topping over top. Cover and refrigerate overnight.
