Artichoke Puffs

Makes 2 dozen

Here is our campus reception favorite appetizer:

1 can of 10 buttermilk biscuits
1 (18 oz.) can artichoke hearts in water
1/2 Cup mayonnaise
1/2 Cup freshly-grated Parmesan cheese

Remove biscuits from can; pinch each one in half and reform into two smaller biscuits to yield 20. Bake according to instructions on can. When done, remove from oven and cool. Slice each in half horizontally to make 40 pieces. Place 1/4 artichoke heart on top of each biscuit piece. Mix mayo and cheese together until smooth. Use this mixture to "frost" the top of each artichoke piece. When ready to serve, broil for 1 to 2 minutes, until lightly browned. Watch closely, they brown quickly.

These are melt-in-your-mouth!
