Homemade Marshmallows Marshamallow Peeps Copycat Newsgroups: rec.crafts.textiles.needlework/Cathy Artigues
1/4 cup cornstarch 1/3 cup confectioners sugar 1 envelope unflavored gelatin 1/3 cup water 2/3 cup granulated sugar 1/2 cup light corn syrup pinch salt 1 tsp vanilla
Sift cornstarch and confectioners sugar together. Lightly grease a pan and sprinkle a little of the sifted mixture in. Shake the pan to coat.
Soak gelatin in water 5 minutes. Add sugar and cook over medium low heat until dissolved.
With electric mixer combine gelatin/sugar mixture, corn syrup, salt and vanilla. Beat at high speed until stiff peaks form, about 15 minutes.
Spread marshmallow mixture in pan, let sit two hours. Cut with a wet knife and roll in remaining cornstarch/sugar mixture. Let stand overnight to let surface dry.
To turn these into peeps, I'd try putting the "wet" marshmallow mixture into a pastry bag with a big tip and piping chick shaped blobs onto waxed paper that's been sprinkled with sugar (look at a peep to get the shape to pipe.) Then, I'd sprinkle them with colored granulated sugar, omitting the cornstarch/confectioners sugar altogether.
