2/3 cup whole bran cereal 1/3 cup oat bran 2/3 cup boiling water l/2 cup skim milk 2 beaten egg whites 2 Tbsp. cooking oil 1 1/2 cups all-purpose flour 1/4 cup packed brown sugar 1 1/2 tsp. baking powder 1 tsp cinnamon 1/4 tsp. salt
Stir together bran cereal and oat bran in boiling water. Stir in milk, egg whites and oil. In another bowl stir together flour, brown sugar, baking powder, cinnamon and salt; add to cereal mixture until just moistened. Batter can be stored in a covered container in the refrigerator up to 1 week.
To Bake: Spray muffin cups with nonstick cooking spray. Fill muffin cups 2/3 full and bake at 400 degrees for 20 minutes or until a toothpick inserted comes out clean. Remove from pans.
