2 large red bell peppers 1/2 cup white rice 1/2 cup frozen corn 2 links fresh turkey sausage 4 scallions, sliced 1/2 cup shredded cheddar 1 tsp cumin 1 small jar salsa (your favorite)
Wash peppers and cut in half lengthwise removing membrane. Cook the rice with 1 cup of water until done (about 15 minutes covered). Brown the sausage and crumble in a bowl. Add the rice and everything else except the salsa. Season as desired with salt and pepper or whatever. I used a "turkey-cilantro" sausage so the stuffing really didn't need much additional seasoning. Pour the salsa in the bottom of a pan large enough for the 4 peppers. Stuff the peppers and bake covered at 350 degrees for about 40 minutes. Source unknown.
