1 pkg. (7 ounces) tricolor spiral pasta 6 oz. thinly sliced hard salami - julienned 6 oz. provolone cheese - cubed 1 can (2-1/4 oz.) sliced ripe olives - drained 1 small red onion - thinly sliced 1 small zucchini - halved & thinly sliced 1/2 cup chopped green pepper 1/2 cup chopped sweet red pepper 1/2 cup minced fresh parsley 1/4 cup grated parmesan cheese 1/2 cup olive or vegetable oil 1/4 cup cider or red wine vinegar 1 garlic clove - minced 1 1/2 tsp. ground mustard 1 tsp. dried basil 1 tsp. dried oregano 1/4 tsp. salt dash pepper 2 medium tomatoes - cut in wedges
Cook pasta al dente - rinse & drain. Place in large bowl - add next 9 ingredients. In covered jar combine oil, vinegar, garlic, mustard, bail, oregano, salt & pepper - shake well Pour over salad - toss to coat. Cover & chill 8 hrs. or overnight. Toss before serving - garnish with tomatoes.
