6 large chicken thighs 6 t. Viansa Hot Sweet Mustard (or any hot sweet mustard) 1/4 cup minced white onion 6 t. freshly grated Parmesan cheese 1 t. salt 1/2 t. pepper 12 small (1-inch) or 6 large (3-inch) smoked sausages (they resemble miniature hot dogs) 1/4 cup dry white wine 3 slices bacon, cut in half
Remove the bone from each thigh by running a small, sharp knife along the bone, and then cutting the meat away from it in one piece. Remove any cartilage and lay out each thigh, skin-side down. Spread one teaspoon mustard on each thigh, and sprinkle each with 2 teaspoons onion, one teaspoon Parmesan cheese, and a dash of salt and pepper.
Preheat oven to 350 degrees Fahrenheit.
Place 2 small or one large smoky sausage in the center of each thigh. Fold the thigh around the sausage and tie it in 2 or 3 places with kitchen string (or tuck tightly into a perfectly sized oven-proof baking dish). Trim the sausage if necessary. Place the thighs on a rack in an oven-proof baking pan, skin side up, and pour the wine in the bottom of the pan. Top each thigh with half a slice of bacon.
Bake for 15 minutes. Remove the bacon and bake 10 minutes more, until browned. If not serving immediately, let the thighs sit for 15 minutes before removing the string.
