Mashed Potato Soup rec.food.recipes/fstanley (1997)
There aren't set ingredient amounts for this recipe-it depends on the amount of leftover mashed potatoes you have.
Leftover mashed potatoes onion butter milk salt & papper seasonings to taste
Saute diced onion in butter until translucent. Add mashed potatoes and milk slowly. Add more of less milk depending if you want a thin or thick soup. Stir until no lumps remain and keep stirring so that it doesn't burn. Salt and pepper to taste. Add other herbs or spices or diced ham/bacon, etc.
