Romaine Salad with Fruits and Poppyseed Dressing
serves 4
1 bag of pre-washed and torn Romaine lettuce 1 pint strawberries, washed, hulled and sliced 1 small can mandarin oranges, drained 1 small can of pineapple tidbits, drained 1/2 c. chopped walnuts
In a salad bowl mix the Roamine with all the fruit and nuts, drizzle on Poppyseed Dressing.
Homemade Raspberry Poppyseed Dressing The Silver Palate Goodtimes Cookbook
makes 2 cups
3 T. raspberry vinegar 2 T. honey mustard 2 T. dry white wine 2 T. fresh lemon juice 3 T. poppyseeds 1 T. minced shallots 2/3 c. sugar 1/2 c. olive oil 1/2 c. veg. oil salt and pepper to taste 3 T. framboise liqueur 3 T. Creme Fraiche (I sued sour cream)
Whisk the vinegar, mustard and wine together in a small mixing bowl. Add the lemon juice, poppyseeds and shallots and stir to mix. Stir in the sugar, gradually whisk in the oils and season to taste with salt and pepper. Finally, add the liqueur and sour cream and stir til smooth. Refrigerate til ready to serve. |
