Berry Nutty Healthy Chef Salad
handful of mixed greens for each plate 1 tomato, sliced 1 cucumber, sliced 1 scallion, sliced, green and white parts 1 red bell pepper, sliced in slivers 2 yellow crookneck squashes, sliced handful of mushrooms, sliced 2 hardboiled eggs, sliced 1 cup sliced fresh strawberries 1/2 c. grated parmesan 8 slices of ham, cubed, shredded or whatever 1/2 of an 8 oz. sharp cheddar, cubed 1/2 c. chopped pecans 1/2 c. or more Hellman's Citrus Splash, any variety
Mix all the ingredients in a large bowl, divide among two dinner plates and enjoy!! This is a very filling salad and very healthy. |
