Chocolate-Orange Marble Cheesecake rec.food.cooking/Nancy Dooley (1994) Serves 16
1/2 cup graham crumbs 1 Tbsp. granulated sugar 2 Tbsp. butter or oleo, melted 1 square (1 oz.) melted unsweetened chocolate *** 3 pkg. cream cheese, soft (8 oz. each) 3/4 cup brown sugar, firmly packed 1/4 cup sugar 4 eggs 2 pints (4 cups) sour cream 1 Tbsp. grated orange rind 6 sq. semisweet chocolate, melted & cooled
Combine first 4 ingredients, mix and press into bottom of lightly buttered 8 inch springform pan. Refrigerate.
Beat cheese smooth in large bowl. Gradually add sugars, mixing well. Beat in eggs, 1 at a time, until fluffy. Beat in sour cream and rind. Reserve 3 cups.
Beat cooled chocolate into remaining cream cheese mix until well blended.
Spoon 1 cup of the reserved plain cheese mix over crust in pan. Spoon 1/2 the chocolate-cheese mixture in 4 separate mounds over plain layer. Cover with another cup of plain cheese mixture. Repeat layers. Using spatula, cut through better being careful not to disturb crust, with zigzag motion to marble.
Bake at 350 degrees for 1 hour. Turn off oven; leave in oven 1 hour. Cool on rack. Chill. Remove from pan. Decorate with orange slices and chocolate leaves or curls. |
