Italian Olive Salad
1 lb Green Olives 2 cups cauliflower florets 2 medium carrots (sliced diagonally) 1 cup celery (sliced diagonally) 2-3 cloves garlic, chopped 2 Tbsp. olive oil 1 Tbsp. wine vinegar 1 tsp. oregano fresh black pepper
Combine all ingredients. Mix very well. Store in air tight container. Stir or shake before serving.
Variations: May add sliced red onion and red pepper.
