Stuffed Portabella Mushrooms rec.food.cooking/cfb (1999) Serves 2
Here's my favorite...very simple, very tasty, can be prepared in less than 10 minutes:
2 Tablespoons coarse fresh bread crumbs 2 Tablespoons freshly grated Parmesan 1 Tablespoon chopped parsley 2 portabella mushrooms (each about 4" in diameter) extra-virgin Olive Oil, a good quality
Preheat broiler.
In small bowl stir together bread crumbs, Parmesan, parsley and pepper to taste. Cut off and discard mushroom stems, remove gills. Put mushrooms, gill sides down, on a baking sheet and brush tops with oil. Broil mushrooms 2 to 3-inches from heat until golden, about 2 1/2 to 3 minutes. Turn mushrooms over and season with SMALL amount of salt and pepper. Broil mushrooms 2 1/2 to 3 minutes more. Mount bread-crumb mixture into mushroom centers and drizzle with oil. Broil stuffed mushrooms until stuffing is golden brown, 1 to 2 minutes.
