This is an old recipe from my Mother. It is light (not heavy), with a little tang and very delicious!

SNOW PUDDING

Combine in saucepan:
3/4 c. sugar
1/4 tsp. salt
3 Tbs. cornstarch
Add gradually :
1 1/2 c. water
Boil for 1 minute until clear.
Remove from heat and add:
1/4 c. lemon juice
1 Tbs. lemon zest
In a large bowl beat:
3 egg whites
'Til they peak. Gradually add the hot mixture on high speed. Beat 3 minutes. Cover with plastic wrap and chill. To serve, cover with cooled custard sauce.

CUSTARD SAUCE

Beat in top of double boiler:
3 egg yolks
Add and mix:
3 Tbs. sugar
dash of salt
Gradually add:
1 1/2 c. milk
Cook until custard coats a metal spoon, about 20 minutes.
Cool and add:
1 tsp. vanilla
