Walnut,Cheese & Herb Burgers: Serves 4
Nut,grains,eggs & cheese contribute a healthy dose of protein to these vegetarian burgers.Enjoy them topped with lettuce,sliced tomatoes,onion & creamy Thousand Island Dressing.I'm not a vegetarian but these could convert me,yum!!!
2 eggs 2/3 c.soft whole wheat bread crumbs 1/2 c.each of chopped walnuts,sliced green onions,toasted wheat germ & small curd cottage cheese 2 Tbls. chopped parsley 1 Tbls.fresh minced basil or 1 tsp. dried 1 tsp.fresh minced oregano or 1/2 tsp.dried 1/2 tsp.paprika garlic salt about 1 Tbls.salad oil 4 slices, 3oz. total, Monterey Jack cheese sesame seed hamburger buns split & toasted
In a large bowl,beat eggs till blended.Stir in bread crumbs,nuts,onions,wheat germ,cottage cheese,parsley,basil,oregano & paprika.Season to taste with garlic salt.Shape mixture into patties,each about 1/2 inch thick.
Swirl 1 tsp.of the oil on a wide metal-handled nonstick griddle.Place patties on griddle & set on cooking grate of charcoal grill,lower lid.Cook,turning once & adding remaining oil,if needed,halfway through cooking time till burgers are browned(8-9 minutes).Top with jack cheese & cook just till cheese is melted(about 1 more minute).Transfer to hamburger buns.
