Honey Wheat Rolls: Yield:24 rolls
1/2 c.butter 1/2 c.honey 1/2 tsp.salt 2 Tbls.potato flakes 1 c.hot water 2 pkgs.active dry yeast 1/2 c.lukewarm water 4 1/2 c.sifted flour(half all purpose,1/2 whole wheat) melted butter
Combine butter,honey,salt,potato flakes & hot water in bowl.Cool to lukewarm.
Sprinkle yeast on lukewarm water,stir to dissolve.Add yeast mixture & 1 c.flour to potato mixture.
Beat with electric mixer at medium speed till smooth,about 2 minutes,scraping bowl occasionally.
Gradually add enough remaining flour to make a soft dough that leaves the sides of the bowl.
Place dough in greased bowl,turn over to grease top.Cover & let rise in warm place till doubled,about 1 1/4 hours.
Turn dough onto lightly floured surface.Divide dough into 24 pieces.Shape each piece into a ball.Place in greased baking pans.Let rise till doubled,about 45 minutes.
Bake in a 375 degree oven 20 minutes or till golden brown.Brush with honey glaze or melted butter.
Honey Glaze for Wheat Rolls:
1/4 c.butter 1 egg white 1/2 c.powdered sugar 1/4 c.honey
Melt butter & cool slightly.Blend in remaining ingredients.
As soon as rolls are removed from oven,brush with glaze.Let set a few minutes.
