30-Minute Chicken and Dumplings rec.food.cooking/Pilgrim (1997)
My rendition of 30 minute chicken and dumplings. It's not the cheap way to go, but it sure is fast.
Bring to a simmer the jumbo can of chicken broth (48oz?).
Cut into it several carrots and several stalks of celery.
Add several (3 or 4) boneless, skinless chicken breasts,(out of the freezer) cut into 1 inch cubes .
Mix up 1 cup's worth Bisquick, using the dumpling instructions on the box. You can add some chopped parsley if you want. Drop the dumplings onto the boiling liquid.
Everything is ready when the dumplings are done...about 20 more minutes.
I know, I know, this isn't the way to do it. But when one of your kids calls with the flu, and says, "Ma, can you bring over a pot of chicken and dumplings. I'm so sick..." this hits the spot, and except for being expensive, is really pretty good.
