Cinnamon Chicken rec.food.recipes/MTGraham (2000)
This is a recipe that uses cinnamon on chicken, we used to serve it in our small diner on a lunch special--people loved it.
1 large fryer (cut up) 2 teaspoons cinnamon fresh ground black pepper salt 1/2 teaspoon paprika 2 tablespoons olive oil
Wash and dry chicken parts well, I always soak my chicken in salted water for one hour, this helps draw out any blood as well as any impurities in the chicken.
Rub each Chicken piece with the olive oil coating well. Evenly sprinkle the cinnamon over the chicken, add salt and pepper to taste and bake in a 350 degree oven for one hour, Chicken will be a golden brown with a lightly spicy coating.
