Garlic Shrimp with Capellini (microwave) Serves 2 Source: Prevention's Quick & Healthy Cooking. Spring 1993.
2-3 cloves garlic, minced 2 Tbls. olive oil 2 Tbls. defatted chicken broth 1/8 tsp. paprika 3/4 lb. shrimp, peeled & deveined 2 Tbls. lemon juice 4 oz. capellini, cooked as per pkg. directions 1/4 c. minced fresh parsley 2 tsp. minced fresh basil Lemon slices for garnish
In an 8 inch square glass baking dish combine the garlic & oil. Microwave on HIGH for 1 minute. Add the broth & paprika. Microwave on HIGH for 1 minute.
Add the shrimp & lemon juice, toss to combine. Cover with waxed paper & microwave on HIGH for 1 minute. Stir, cover & microwave on HIGH till the shrimp just begins to turn opaque, 2-3 minutes.
Toss the capellini, parsley & basil with the shrimp mixture. Garnish with the lemon slices.
