Tortilla Casserole (microwave): Serves 2 Source:Prevention's Quick & Healthy Cooking,Spring 1993.
This casserole makes an especially quick evening meal for 2.
2 boneless,skinless chicken breast halves 4 flour tortillas 4 scallions,finely chopped 1 c.salsa 1/4 c.shredded low-fat Cheddar cheese
Place the breasts side by side on a micro-proof plate with the thicker areas facing out.Cover with waxed paper,microwave on HIGH for 3 minutes.If the breasts still have pink areas,flip the pieces,rotate the plate a half turn & microwave on HIGH for 1 minute.
Cover with foil & let stand for 5 minutes,remove foil.When the chicken is cool enough to handle,shred it.Divide the chicken among the tortillas .Sprinkle with the scallions.Top each with 2 Tbls.of the salsa.Roll up the tortillas & place in a 7" x 11" micro-proof baking dish.Top with remaining salsa.
Microwave on HIGH for 3 minutes.Sprinkle with Cheddar cheese.Microwave on MEDIUM till the cheese melts,2-3 minutes.
