Spinach with Plum Sauce Dressing:
Serves 6
Source:Betty Crocker's Chinese Cookbook.Recipes by Leeann Chin.

16 oz.spinach,torn into pieces(about 6 c.)
4 oz.cooked & cleaned shrimp
2 Tbls.diced red bell pepper or pimento
8 small mushrooms,sliced
Plum Sauce Dressing(see below)
1/4 c.toasted slivered almonds

Toss spinach,shrimp,bell pepper,mushrooms & Plum Sauce Dressing till spinach is evenly coated.Sprinkle with almonds.

Plum Sauce Dressing:

1/2 c.Plum Sweet & Sour Sauce(see below)
2 Tbls.vegetable oil
2 Tbls.frozen(thawed)orange juice concentrate
1 1/2 tsp.dried red pepper flakes
1 Tbls.finely chopped garlic

Mix all ingredients with wire whisk or fork till blended.

Plum Sweet & Sour Sauce:
Yield: 5 2/3 cups.

1 can(20oz.)crushed pineapple in heavy syrup
1 c.sugar
1 c.water
1 c.vinegar
1 Tbls.dark soy sauce
2 Tbls.cornstarch
2 Tbls.cold water
1 c.plum sauce or plum jam or orange marmalade can be substituted for the plum sauce.

Heat pineapple(with syrup),sugar,1 c.water,vinegar & soy sauce to boiling.Mix cornstarch & 2 Tbls.water,stir into pineapple mixture.Heat to boiling,stirring constantly.Cool to room temperature,stir in plum sauce.Cover & refrigerate.

This sauce is also great with appetizers i.e.eggrolls & crab rangoons.
