for a nice breakfast or brunch, i like to serve bagels, cream cheese, smoked salmon. spread the smoked salmon on a platter. cover with sliced red onion, fresh dill and capers. serve the bagels sliced on a plste and your cream cheese in a lovely dish. this is great.

another luncheon recipe is,

mediterranean pie

1 onion chopped
1 clove garlic minced
1 tblsp. butter
2 pkgs. fresh spinach cleaned
1/2 lb. sliced ham
1 lb. mozzerella cheese sliced
1 red pepper cut in strips
4 eggs beaten
pastry

make pastry. roll to fir a greased 4 inch deep baking dish. line dish, saving enough for top.

brown onion and garlic in butter. add spinach., cook until spinach wilts. remove from heat.

place half of the ham slices in pastry, hal;f of the cheese, half of the spinach and half of the pepper strips. pour eggs over. layer rest of the ingred. place top of pastry on. seal. bake 400o for 45 min. or until pastry is browned. serve hot or cold.

this is great for picnics.
