Yankee Corn Bread Makes 8 or 9 servings.
1 1/4 c Yellow cornmeal 1 1/4 c All-purpose flour 1/4 c Sugar 3/4 tsp Salt 4 tsp Baking powder 1 1/2 c Milk 1/4 c Shortening, softened 1 Egg
Preheat oven to 450 degrees. In a large mixing bowl, sift together cornmeal, flour, sugar, salt, and baking powder. Add milk, shortening and egg. Beat with a rotary beater or wire whisk until smooth, about 1 minute. Pour into well-greased 8-inch-square baking pan. Bake 20 to 25 minutes. Serve Warm with butter. |
