Berry Mallow Yam Bake rec.food.recipes/Barbara Lull (1995) Servings: 6
Purchased a Bright Ideas for the Holidays booklet that was published by Kraft General Foods in the 1990's. It contained this very unique yam recipe which we made several Christmas' ago for a mass family gathering in Oregon. It was great and keeps well to take to pot lucks also.
1/2 cup flour 1/2 cup packed brown sugar 1/2 cup old fashioned or quick rolled oats, uncooked 1 tsp. cinnamon 1/3 cup Parkay margarine 2 (16 oz.) cans yams, drained 2 cups fresh cranberries 1 1/2 cups Kraft Miniature Marshmallows
Preheat oven to 350 degrees
Mix together flour, brown sugar, oats and cinnamon. Cut in margarine until mixture resembles coarse crumbles.
Toss 1 cup of flour mixture (from above instruction) with yams and cranberries; place in 1 1/2 quart casserole. Top with remaining flour mixture. Bake 35 minutes.
Sprinkle with marshmallows. Broil until browned.
