Aunt Greta's German Potato Salad rec.food.cooking/Eddie Van Huffel (1992)
My wife's aunt from Hamburg gave me this recipe years ago. I definitely will share this with anyone interested. It tastes better the second day, and I always make it in the evening, to let the flavors disperse evenly.
5 lb. potato 1 lb. bacon 3 large brown onions 1/2 cup vinegar 2 cups water 2 Tbsp sugar 1 Tbsp salt 2 Tbsp cornstarch
Boil potato, cool and set aside. May be refrigerated.
Saute bacon (diced) with two of the diced onions until tender but not brown. Add vinegar, water, sugar and salt. Cook with cornstarch until consistency of heavy gravy.
Pour over cooled sliced potatoes, which have been seasoned with salt and pepper, Cool.
Warm when ready to serve in oven, crockpot or electric roaster. Add remaining raw onion to potatoes if desired. If potatoes seem dry add 1/2 cup I hope that you enjoy the salad, as we do here. I seldom make it though, so that we don't get tired of it.
