Spanish Brown Rice

1/4 cup olive oil
1 medium onion, chopped
1 small diced green pepper
1 clove minced garlic
1 cup canned tomatoes or sauce
1 Tbsp. salt
2 cups brown rice, raw
4 cups water
2 pimentos
1/2 cup olives

Saute the onions, peppers and garlic in a heavy pan for just a few minutes. They should not brown.

Rapidly boil the water, tomatoes (or sauce) and rice for 5 minutes then turn heat down to simmer for about 45 minutes. Turn the heat off, and let stand about 10 minutes to absorb all the liquid.

Slice the olives and pimentos and decorate the top of the rice.
