Banana Cake with Sugar Glaze rec.food.baking/Denise (1999)
Here's the recipe that my mom used (and now each of my three sisters, plus myself, uses) for a wonderful snack-type banana cake.
1/2 cup shortening 2 cup pre-sifted flour 1 1/3 cup sugar 1 1/2 tsp. Baking powder 1 teaspoon baking soda 1 teaspoon salt 1/2 teaspoon nutmeg 1 1/2 cup mashed ripe bananas 1/4 cup milk 1 teaspoon vanilla 2 eggs 1/2 cup walnuts (finely chopped)
Stir shortening to soften; sift in dry ingredients then add banana, milk, and vanilla. Mix until flour is dampened. Beat two minutes. Add eggs and beat two minutes more. Stir in nuts. Bake in greased and floured 9 x 13 pan in 350 oven for 35 to 40 minutes or until done.
Glaze: 2 cups confectioner sugar 2 to 4 Tablespoons milk 1 teaspoon vanilla
Combine until smooth (glaze should be thin like thick gravy). Add more sugar or milk as necessary to perfect the texture. Will run the sides a bit, but should run slowly! Glaze while cake is still slightly warm for best results.
