Spicy Apple Cake rec.food.cooking/Glenn (and/or) Sharon Gorman (1994)
2 cups sifted flour 2/3 cup sugar 1 teaspoon salt 1 teaspoon baking soda 1 teaspoon baking powder 1/2 teaspoon nutmeg 1/2 teaspoon cinnamon 1/2 cup shortening 1/2 cup molasses 1 1/2 cups coarsely grated pared cooking apples 2 eggs
Sift together flour, sugar, salt, baking soda, baking powder, nutmeg and cinnamon. Add shortening, molasses and grated apples. Mix just enough to moisten flour; beat 2 minutes with electric mixer at medium speed. Add eggs and beat 2 more minutes. Turn into a greased 9 x 9 x 2 inch pan.
Bake at 350 degrees for 40-45 minutes. Cut in squares and serve with sweetened whipped cream sprinkled with nutmeg.
