Recipe: Oatmeal Cake

Oatmeal Cake

1 stick butter or margarine,cut in small pieces
1 c.quick cooking oatmeal
1 1/2 c.boiling water

Let the above stand for 20 minutes in mixing bowl.

1 c.brown sugar
1 c.white sugar
2 unbeaten eggs

Add to the above mixture,mix well.

Sift together:

1 1/2 c.flour
1 tsp. baking soda
1 tsp.nutmeg
1 tsp.cinnamon
1 tsp.salt

Add to the other mixture with 1 tsp. vanilla.

Bake 30 minutes at 350 degrees in a 9" x 13" baking pan.

Frosting:
1 c.brown sugar
1 1/2 c.coconut
1 unbeaten egg
1/4 c.melted butter
1 c.nuts
3 Tbls.light cream

Mix altogether.Pour over cake as soon as its taken from oven.Stick under broiler for a minute or two till it bubbles-watch it closely so it doesnt burn!
