Sauteed Cabbage

This is only one serving, but the recipe can easily be doubled or quadrupled. This is fabulous served with broiled lamb or pork.

1 cup raw nappa cabbage, sliced very very thin; 3.1g
2 Tbsp minced scallion tops; 0.8g
1 Tbsp butter
salt and pepper to taste

Melt the butter over low heat. Add the cabbage and the scallions. Stir around to coat with butter. Cover and leave for 15 minutes, stirring occasionally if you get nervous. After 15 minutes, the cabbage should be soft and translucent and there should be some liquid in the pan. Turn the heat up and take the cover off. Boil, stirring constantly until the juices cook off. Add salt and pepper to taste.
