2 1/2 lb Beef brisket -- 1.25kg1" 25mm cubes 1 lb ground pork -- 500g 1 lg onion -- chopped fine 2 tbsp Olive oil 2 Garlic clove -- minced 2 tbsp green chiles -- diced 1/2 lb Tomato sauce -- 250g Salt and pepper -- to taste 1 beef bouillon cubes 3/4 lb beer -- 445ml Budweiser or s 1 1/4 cups Water 3/8 cup Chili powder 2 1/2 tbsp Ground cumin 1 dash Dry mustard 1 dash molasses -- a tiny bit 1 pinch Oregano
In a large kettle or Dutch oven, brown the Beef, Pork and Onions in hot olive Oil. Add Salt and Pepper to taste. Add remaining ingredients. Stir well. Cover and simmer 3 to 4 hours, until meat is tender and Chili is thick and bubbly. Stir occasionally.
