Tailgating Recipes - Italian Sausage Sandwiches, Chicken and Beef Kabobs, Barbecued Kielbasa rec.food.cooking/HOH177 (1995)
I have season tickets to the Philadelphia Eagles and we tailgate at every home game. We've found that simple is usually best!
Italian Sausage Sandwiches Last game I pre-grilled 3 kinds of sausages (mild Italian, hot Italian, and turkey) with a great honey mustard and put them fresh torpedo rolls. Wrap them up in foil and reheat on the grill at the game.
Chicken and Beef Kabobs This week I'm bringing pre-cooked kabobs. I'll marinate chicken and beef overnight. I add a couple different types of peppers, some cherry tomatoes, etc. I grill them that morning before I leave, then reheat at the game. (I live 1 1/2 hours from the Vet, so things usually need to be re-warmed when I get there.)
I've brought breakfast sandwiches on English muffins, chili (wrapped in a blanket to warm on the ride), subs cut in small pieces.
Here's a favorite recipe with the rest of my tailgate crowd. I usually make this on Saturday, reheat on the grill and put the kielbasi on torpedo rolls.
Barbecued Kielbasa
3 lbs kielbasa 1 cup bourbon 1 cup brown sugar 1 cup chili sauce
Combine bourbon, brown sugar, and chili sauce. (I did it in the blender.)
Pour over kielbasa in metal baking pan. (I used one of those aluminum foil throwaway pans.)
Bake covered at 375 degrees for 3 hours. Flavor is very good if made the day before, refrigerated, then reheated without cover.
Serve with sturdy toothpicks as an appetizer or in torpedo rolls as a sandwich.
