Crunchy Holiday Cookies Yield: 24 Servings
1/2 c butter 1/2 c brown sugar 1/2 c white sugar 1 egg, beaten 1 tsp. vanilla 1 c flour 1/2 tsp. soda 1/4 tsp. cinnamon 1/2 tsp. salt 1/4 tsp. baking powder 1 c rolled oats 1 c cornflakes 1/2 c coconut 1/2 c chopped pecans
Cream butter; add sugar, egg and vanilla. Sift in dry ingredients. Add cornflakes, oats, coconut and nuts. Roll into small balls an place 2-inches apart on a cookie sheet. Bake at 350 degrees for 10 to 15 minutes. Makes 3 dozen.
