RAISIN LOAF Yield: 1 loaf
1 cup bread flour 1/2 teaspoon salt 1 teaspoon baking powder 1/2 teaspoon ground nutmeg 6 tablespoons butter or margarine, softened 1/2 cup sugar 2 eggs, lightly beaten 3/4 cup raisins 2 tablespoons milk
Preheat oven to 350F. Spray an 8x4-inch loaf pan with non-stick vegetable spray.
In a medium bowl, combine flour, salt, baking powder, and nutmeg; set aside.
In a large mixing bowl, cream butter and sugar until light and fluffy. Add eggs, beating until well blended. Stir in raisins. Fold flour mixture into creamed mixture. Stir in milk. Spoon batter into prepared loaf pan.
Bake for 1 hour or until a tester inserted in the center of the loaf comes out clean. Cool in pan for 10 minutes. Remove from pan; cool completely on a wire rack.
