SMOKED GOUDA AND ONION QUICHE (Yield: 6 servings)
1 (9-inch) deep-dish pie shell, unbaked 1 tablespoons butter or margarine 1/2 onion, diced 3/4 cup shredded smoked Gouda cheese 4 eggs, lightly beaten 1 1/2 cups half-and-half 1 1/2 teaspoons chopped parsley 1/8 teaspoon white pepper 1/8 teaspoon salt
Preheat oven to 375°F. With a fork, prick pastry shell. Bake for 5 minutes. In a large skillet, melt butter; add onions and sauté until soft.
Sprinkle cheese in bottom of prepared pastry shell. In a medium bowl, combine eggs, half-and-half, parsley, onions, pepper, and salt; mix well. Pour into prepared pastry shell. Bake 25 to 35 minutes or until center is just set. Serve warm or chilled.
