SPINACH QUICHE (Yield: 6 servings)
1 (9-inch) pie shell, partially baked 1 tablespoon Dijon mustard 2 tablespoons butter or margarine 2 tablespoons finely chopped green onion 1 (10-ounce) package chopped spinach, cooked and drained 1/2 teaspoon salt 1/8 teaspoon pepper 1/8 teaspoon ground nutmeg 1 cup cottage cheese, 3 eggs 1/2 cup heavy cream 1/4 cup shredded Swiss cheese 1 tablespoon butter or margarine, softened
Preheat oven to 375°F. In a large skillet, melt butter; add green onions and sauté for 3 minutes. Add spinach; stir until moisture is evaporated. Stir in salt, pepper, nutmeg, and cottage cheese. Blend in eggs and sour cream. Pour into pastry shell. Sprinkle with cheese; dot with butter. Bake 25 to 30 minutes or until a knife inserted in the center comes out clean.
