Muffins with Carrots, Nuts, Raisins and Coconut rec.food.recipes/GMGGB (1998)
2 cup flour 1 1/3 cup sugar 2 tsp baking soda 2 tsp cinnamon 1/4 tsp nutmeg 1/2 tsp salt 2 cups grated carrot 1/2 cup raisins 1/2 cup chopped pecans 1/2 cup sweetened shredded coconut 1 cup peeled, cored, grated apple 3 lg eggs 3/4 cup vegetable oil 1/4 cup orange juice 2 tsp vanilla
Preheat oven to 350 degrees.
Sift together first six ingredients (dry ingredients).
Stir in carrot, raisins, pecans, coconut, and apple.
In separate bowl, beat eggs together with oil, juice, and vanilla.
Stir liquid mix into flour mix Spoon batter into well greased muffin tins
Bake for 35 min or until done Cool 5-10 minutes and then turn out to cool further.
