I often have trouble with rolled cookie recipes here in Hawaii because the weather is so hot and humid.

This one works like a dream!

Rolled Sugar Cookies
3 dozen

1/2 pound butter, at room temperature
1 cup sugar
1 egg
1 teaspoon vanilla
3 cups flour
2 teaspoons baking powder
flour for sprinkling

Cream butter and sugar together. Add vanilla and egg, mix well.

Mix flour and baking powder well, then add to the other ingredients. Knead to a smooth dough.

Preheat oven to 350F.

Roll out dough on floured surface. Cut out desired shapes; keep all the scraps together to roll at the end so you only reroll them once.

Bake 10-12 minutes, until golden. Let cool on a wire rack, then decorate as desired.
