BAKED RICE PUDDING Source: SUBMITTED BY DOREAN L Number of servings: 8
1 c. water 1/2 c. uncooked rice 2 eggs, beaten 1&1/2 cups skim milk (you can use nonfat dry milk) 3/4 c. sugar 1 tsp. cornstarch 1/2 c. raisins (opp.)
Preheat oven to 350&!76;F. Bring water to a boil. Add rice. Reduce heat. Cover and simmer for 14 minutes. Mix eggs and milk in a bowl. Add sugar and cornstarch. Mix well. Add cooked rice and raisins to the eg mixture. Pour mixture into a lightly greased baking dish. Place baking dish in a pan of hot water, 1" deep. Place pan with dish in oven and bake for 1&1/2 hours, stirring occasionally or until pudding is creamy and liquid is absorbed.
