Rhubarb Cake Source: Jenny
Mix together, pour into pan:
1 1/4 cup brown sugar 1/2 cup shortening 1 egg 2 cups flour 1/2 tsp salt 2 tsp vanilla 1 cup milk 5 cups rhubarb
Combine and sprinkle on top:
1/2 cup sugar 1 tsp cinnamon 1/2 pkg coconut
Bake 350F for one hour. Top will darken.
