MANGO SAUCE This wonderful sauce is pour into sterilized jars and sealed immediately. After opening a bottle, it must be refrigerated. The sauce can be served with meats and poultry.
3 quarts ripe mangoes, peeled and sliced 2 inch piece fresh ginger, peeled 1 cup sliced green pepper 4 cloves garlic, minced 1/4 tsp cayenne pepper 1 lb onions sliced 3 cups vinegar 2 tsp Angostura bitters 1 tsp Tabasco 4 tsp ground allspice 3 tsp cumin 2 tsp ground cloves 1 tb salt 6 cups sugar 1/2 cup white wine
Process mangos, ginger and green pepper in processor until smooth. Combine sauce and remaining ingredients in a large, heavy pot. Simmer uncovered for approximately 3 hours, stirring occasionally until thick. Pour into sterilized jars and seal immediately.
