1 cup chopped onion 1 Tbsp vegetable oil 1 1/2 cups crushed tomatoes (drained) 1 (4 oz) can chopped chiles 1 tsp salt 1/2 tsp pepper 1 lb extra sharp grated Cheddar cheese
Saute onion in oil until soft. Add tomatoes, chiles, salt, pepper and cheese and cook, stirring until cheese is melted.
Serve warm in a chafing dish with corn chips.
