Dutch Cheese Soup Servings: 4
4 cups unsalted chicken stock 5 eggs 1/4 cup whipping cream 1 1/3 cup grated Gouda Cheese (or Edam, Gruyere or Cheddar) 1/2 cup finely chopped lean ham 3 tb Gin (optional) 2 tb snipped fresh chives Croutons
Bring chicken stock to boil in large saucepan or Pot. Beat eggs & cream in large bowl until smooth. Stir in grated cheese & chopped ham. Slowly pour cheese mixture into boiling chicken stock, stirring constantly. Pour in Gin if desired, stirring to incorporate. Ladle into bowls. Garnish with chives & croutons if desired.
