Old Fashioned Lattice Top Peach Cobbler serves 12
Filling: 10 peaches, peeled and sliced 1/2 c. water 1 1/2 c. sugar 2 T. self-rising flour pinch of salt 1/2 c. butter Cook peaches in water til tender. Mix flour, sugar, and salt, add to the peaches. Add the melted butter and stir to blend.
Pastry: 1 c. self-rising flour 1/2 t. salt 1/3 c. shortening 4 t. milk or enough to make a stiff dough
Blend flour, salt anda shortening to a coarse meal texture. Add milk. Roll on floured surface. Pour half of peaches into a 9x13 inch baking pan. Cut some dumplings and stuff them into the mixture. Pour remaining peaches over and cut some lattice strips and layer them over the peaches. Sprinkle some sugar over and Bake in a 350 oven for 40 minutes or so or until top is browned.
