Jambalaya

2 tablespoons fat (I use bacon grease)
1 cup onions, chopped
1 cup green peppers,chopped
2 cloves garlic, finely minced
1 cup cooked chicken, diced
1 cup ham, dice
1 cup smoked sausage, sliced
2 1/2 cups canned tomatoes, undrained
1 cup raw white rice
1 1/2 cups chicken broth
1/2 teaspoon thyme
1 tablespoon parsley, chopped
1/4 teaspoon chili powder
1 1/2 teaspoons salt
1/4 teaspoon black pepper

Preheat oven to 350 degrees. Melt the fat in a large skillet and add onion, green pepper and garlic. Cook slowly, stirring often, until the onion and pepper are tender. Add the tomatoes with their liquid, rice broth and seasoning. Turn the mixtue into a large casserole. Cover and bake until the rice is tender, about 1 1/4 hours.

I usually serve this with a crisp green salas, French Bread and praline ice cream.
