1 pound butter or margarine 2 pounds peanut butter 3 pounds powdered (confectioner's) sugar semi-sweet chocolate (at least 4 or 5 12-oz bags of chocolate chips will be needed)
Melt the butter. Add peanut butter and melt. Stir in powdered sugar a little at a time. (You may not need all of the sugar. Consistency should be similar to pie crust dough or roll-out cookie dough. You don't want it to get too crumbly or be too soft). Chill peanut butter mixture. Roll into balls about 3/4 to 1 inch in diameter. Chill. Melt chocolate in double boiler. (Hint: melt only 1 or 2 bags at a time) Using a toothpick, dip peanut butter balls into the chocolate about 3/4 of the way. Do not completely cover in chocolate, but leave a small circle of peanut butter showing (this is what makes the candy resemble the nut of the buckeye tree). Place on wax paper and chill to set. Candy can be frozen up to several weeks.
*Note: This recipe make a LOT of candies. Depending on the size of the balls, it could be over 200 pieces of candy. You may want some help for rolling and dipping. There are other recipes available that use more ingredients or more complicated steps, but this really is one of the easiest.
