Often called "the mother of all comfort foods," meatloaf is a hearty dish cherished by American families for many generations. This updated version has a savory yet sweet taste. It can also be used to make a juicy burger - another popular comfort food.
1/2 pound ground turkey breast 1/2 pound ground turkey 1/3 cup ketchup 1 cup unseasoned breadcrumbs, preferably whole wheat 3/4 cup finely chopped onion 1 tsp. dried basil 2 tsp. dried oregano 2 garlic cloves, minced 1 large egg 1/2 cup shredded carrots 1/4 cup chopped fresh parsley 1/4 cup green bell pepper, minced 1/4 cup red bell pepper, minced Salt and freshly ground black pepper, to taste 3 Tbsp. ketchup (optional topping)
Preheat oven to 350 degrees.
Combine all ingredients except 3 Tbsp. ketchup in large bowl. Place mixture in 9 x 5-inch non-stick loaf pan.
Bake 1 hour, uncovered. Remove from oven and let stand 10 minutes. Spread 3 Tbsp. ketchup on top, if desired. Cut into slices and serve.
Makes 5 servings. Per serving: 276 calories, 9 g total fat (2 g saturated fat), 25 g carbohydrates, 23 g protein, 2 g dietary fiber, 463 mg sodium.
