Insalata Russa (Russian Salad)

My Mom used to make this salad called 'Insalata Russa' when we were growing up in Rome, it was sooooo good!!!

5 potatoes(boiled and peeled)
4 hard boiled eggs
1 small jar of pimientos, chopped
1 can of medium black olives(pitted)
1 small jar of giardiniera (Italian pickled vegetables)
1 medium size jar stuffed green olives(medium)
2 cups of mayonnaise(divided)
2 cups of sour cream(divided)
4 Tbsp. of French mustard(divided)

Mash potatoes with 1 cup of mayo, sour cream, 2 Tbsp. mustard chopped 'giardiniera'(drained)), 1/2 can chopped olives(black and green)and pimientos; mix thoroughly and form an oval on a platter, I'm not sure about the size of it. Mix sour cream mayo and mustard(remaining 1/2) and spread on 'oval' to cover; decorate with sliced olives, sliced hard boiled eggs(2)and some pimiento slices reserved from jar. Refrigerate until ready to serve.
