Processor Applesauce Cake Recipe by: Oster blender recipe book
1 1/2 cups flour -- sifted 2 teaspoons baking powder 1/2 teaspoon salt 1/2 teaspoon cinnamon 1/2 teaspoon ground nutmeg 1/2 teaspoon ground cloves 1 cup walnuts 2 heaping cups tart apples -- chopped* 2 eggs -- room temperature 1/2 cup shortening 1 cup sugar apple cider
Heat oven to 350 deg. Grease and flour a 9-inch square cake pan (do NOT use a smaller pan). Sift dry ingredients together into a large bowl. Put remaining ingredients (except nuts) into bowl of food processor and process until smooth (don't overprocess). Add nuts; process only until coarsely chopped. Pour liquid mixture into dry ingredients and mix by hand only until flour is thoroughly moistened. Batter will be somewhat stiffer than regular cake batter. (The variety, and age, of apples will determine consistency of the batter.) If batter is too thick, add very small amounts of apple cider to thin it down somewhat.
*Best apples to use are tart and juicy (Winesap, Granny Smith, Jonathan, etc.). Pour batter into prepared pan and bake 35-45 minutes.
