Margarita Cornish Game Hens (rotisserie) rec.food.cooking/Greg Montez
My very favorite recipe is "Margarita game hen". I usually split the hen, marinade it for two hours, and grill it, but it can also be left whole and roasted on a rotisserie, basting often. Serve with green salad and white zinfandel.
Margarita marinade: 1/2 cup orange juice Juice of 1 small lemon 1/4 cup dark tequila Pinch of crushed red pepper Pinch dried garlic (or fresh equivalent) Pinch of cilantro
Use enough pepper to make it tangy, but not thermonuclear.
